Description

This vibrant Zucchini Noodle Stir-Fry is a quick and healthy vegetarian dish packed with fresh vegetables and Asian-inspired flavors. Featuring spiralized zucchini noodles sautéed with bell peppers, carrots, broccoli, garlic, ginger, and a savory soy sauce, it’s a light yet satisfying meal perfect for busy weeknights or anyone seeking a nutritious plant-based dinner.

Ingredients

Scale

Vegetables

  • 2 medium zucchini, spiralized
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated

Sauce & Seasoning

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds

Instructions

  1. Heat Sesame Oil: Warm 1 tablespoon of sesame oil in a large skillet over medium heat to prepare for sautéing the aromatics.
  2. Sauté Garlic and Ginger: Add the minced garlic and grated ginger to the skillet, cooking for about 1 minute until fragrant but not browned, to release their flavors.
  3. Cook Vegetables: Toss in the sliced bell peppers, julienned carrots, and broccoli florets. Stir-fry these fresh vegetables for 5 minutes, allowing them to soften slightly while maintaining some crunch.
  4. Add Zucchini Noodles and Soy Sauce: Stir in the spiralized zucchini noodles along with 2 tablespoons of soy sauce. Cook everything together for another 2 to 3 minutes until the zucchini noodles soften but remain firm, absorbing the savory sauce.
  5. Finish and Serve: Remove the skillet from heat. Garnish with 1 tablespoon of toasted sesame seeds for a nutty crunch and serve immediately for best texture and flavor.

Notes

  • Do not overcook zucchini noodles to avoid sogginess; they should be tender but with a slight bite.
  • Feel free to swap soy sauce with tamari for a gluten-free version.
  • Add a protein like tofu or chicken if desired for a more filling dish.
  • Freshly grated ginger adds brightness, but ground ginger can be used in a pinch.
  • Use a spiralizer or a vegetable peeler to create zucchini noodles.
