Description

A comforting and flavorful Ultimate Sushi Bake perfect for cozy nights at home, featuring cooked jasmine rice layered with a creamy, spicy shrimp mixture, baked to perfection and topped with fresh avocado, chives, and savory garnishes.

Ingredients

Scale

Rice Layer

  • 0.5 cup jasmine rice (yields 1 cup cooked rice)

Shrimp Mixture

  • 0.5 pound jumbo shrimp (thawed, peeled, deveined, and cut into small pieces)
  • 2 tablespoons cream cheese (softened)
  • 2 tablespoons mayo
  • Sriracha (to desired spice level)
  • 0.5 teaspoon sesame oil (optional)
  • 1 tablespoon coconut aminos

Garnish and Serving

  • Nori sheets or snack-size nori squares
  • 0.5 avocado (sliced)
  • Fresh chives (finely chopped)
  • Spicy mayo (for drizzling)
  • Sesame seeds (for garnishing)
  • Furikake seasoning (for added flavor)
  • Unagi sauce (for drizzling)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the sushi bake.
  2. Cook Rice: Rinse the jasmine rice under cold water until the water runs clear to remove excess starch. Cook the rice according to package instructions until tender and fluffy.
  3. Prepare Shrimp Mixture: In a large mixing bowl, combine softened cream cheese, mayo, sriracha to taste, sesame oil (optional), and coconut aminos. Mix well until smooth and creamy.
  4. Add Shrimp: Gently fold the cut shrimp pieces into the creamy mixture, ensuring they are evenly coated without breaking up the shrimp.
  5. Layer Rice: Press the cooked jasmine rice evenly into the bottom of a small baking dish to form the base layer.
  6. Add Shrimp Layer: Spread the shrimp and cream cheese mixture evenly over the rice layer.
  7. Bake: Place the dish uncovered in the oven and bake at 400°F for 12 minutes to cook and warm through.
  8. Broil: Switch the oven to broil mode and broil the sushi bake for an additional 2-3 minutes until the top is slightly browned and bubbly.
  9. Garnish and Serve: Remove from oven and let it sit for a minute. Garnish with sliced avocado, chopped fresh chives, sprinkle sesame seeds and furikake seasoning, then drizzle with spicy mayo and unagi sauce. Serve with nori sheets or snack-sized nori squares for scooping.

Notes

  • Adjust the amount of sriracha to control the spice level according to your preference.
  • If sesame oil is not available, it can be omitted without drastically affecting flavor.
  • Use fresh, high-quality shrimp for best texture and taste.
  • Serve immediately after baking and garnishing for the best flavor and texture.
  • Leftovers can be refrigerated and reheated but are best enjoyed fresh.
  • For a vegetarian version, substitute shrimp with seasoned tofu or mushrooms.
