Rice Layer
- 0.5 cup jasmine rice (yields 1 cup cooked rice)
Shrimp Mixture
- 0.5 pound jumbo shrimp (thawed, peeled, deveined, and cut into small pieces)
- 2 tablespoons cream cheese (softened)
- 2 tablespoons mayo
- Sriracha (to desired spice level)
- 0.5 teaspoon sesame oil (optional)
- 1 tablespoon coconut aminos
Garnish and Serving
- Nori sheets or snack-size nori squares
- 0.5 avocado (sliced)
- Fresh chives (finely chopped)

Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the sushi bake.
- Cook Rice: Rinse the jasmine rice under cold water until the water runs clear to remove excess starch. Cook the rice according to package instructions until tender and fluffy.
- Prepare Shrimp Mixture: In a large mixing bowl, combine softened cream cheese, mayo, sriracha to taste, sesame oil (optional), and coconut aminos. Mix well until smooth and creamy.
- Add Shrimp: Gently fold the cut shrimp pieces into the creamy mixture, ensuring they are evenly coated without breaking up the shrimp.
- Layer Rice: Press the cooked jasmine rice evenly into the bottom of a small baking dish to form the base layer.
- Add Shrimp Layer: Spread the shrimp and cream cheese mixture evenly over the rice layer.
- Bake: Place the dish uncovered in the oven and bake at 400°F for 12 minutes to cook and warm through.
- Broil: Switch the oven to broil mode and broil the sushi bake for an additional 2-3 minutes until the top is slightly browned and bubbly.
- Garnish and Serve: Remove from oven and let it sit for a minute. Garnish with sliced avocado, chopped fresh chives, sprinkle sesame seeds and furikake seasoning, then drizzle with spicy mayo and unagi sauce. Serve with nori sheets or snack-sized nori squares for scooping.
