Instructions
- Bake Sweet Potatoes: Preheat your oven to 400°F (200°C). Brush the halved sweet potatoes with 3 tablespoons olive oil and season with salt and pepper. Place cut side down on a baking sheet and bake for 30-40 minutes until tender and easily pierced with a fork.
- Cook Onion: While the sweet potatoes are baking, heat 1 tablespoon olive oil in a large skillet over high heat. Add diced onion and sauté for 3 to 5 minutes until golden and soft.
- Brown Meat and Flavor: Push the onions to the edges of the skillet and add ground beef or turkey to the center. Sear the meat without moving for a minute, then crumble and stir. While the meat browns, add minced garlic, taco seasoning, and beef bouillon powder. Cook until the liquid is absorbed and the meat is fully cooked.
- Combine Sauce and Beans: Stir in the tomato sauce until fully incorporated. If using, add black beans and continue to cook until they are warmed through.
- Make the Sauce: In a small bowl, whisk together mayonnaise, lime zest, lime juice, ground cumin, paprika, chili powder, Sriracha, salt, and black pepper until smooth and creamy.
- Assemble the Dish: Place the baked sweet potato halves flesh side up on plates. Lightly mash the insides with a fork to create a soft bed. Spoon the meat filling generously over each sweet potato. Drizzle with the lime-mayo sauce and finish with your desired toppings such as shredded cheese, diced tomatoes, or avocado.
