Sweet Potatoes

  • 4 medium sweet potatoes (10-to-13-ounce each), scrubbed clean and halved lengthwise

Meat Filling

  • 1 tablespoon olive oil
  • 1/2 cup diced yellow onion (about 1/2 an onion)
  • 2 teaspoons minced garlic
  • 1 batch taco seasoning (see note 1)
  • 1 1/2 teaspoons beef bouillon powder
  • 1 pound lean ground beef or ground turkey (93/7)
  • 1/3 cup tomato sauce
  • 1 (15.5-ounce) can black beans, drained and rinsed (optional)

Sauce

  • 1/2 cup mayonnaise
  • Zest of 1 lime (about 1/4 teaspoon)
  • 3 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1 teaspoon Sriracha
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Optional Toppings (see note 2)

  • Shredded cheese
  • Diced tomatoes
  • Chopped cilantro
  • Avocado slices or guacamole
  • Green onions

  • Sour cream or additional mayo


Instructions

  1. Bake Sweet Potatoes: Preheat your oven to 400°F (200°C). Brush the halved sweet potatoes with 3 tablespoons olive oil and season with salt and pepper. Place cut side down on a baking sheet and bake for 30-40 minutes until tender and easily pierced with a fork.
  2. Cook Onion: While the sweet potatoes are baking, heat 1 tablespoon olive oil in a large skillet over high heat. Add diced onion and sauté for 3 to 5 minutes until golden and soft.
  3. Brown Meat and Flavor: Push the onions to the edges of the skillet and add ground beef or turkey to the center. Sear the meat without moving for a minute, then crumble and stir. While the meat browns, add minced garlic, taco seasoning, and beef bouillon powder. Cook until the liquid is absorbed and the meat is fully cooked.
  4. Combine Sauce and Beans: Stir in the tomato sauce until fully incorporated. If using, add black beans and continue to cook until they are warmed through.
  5. Make the Sauce: In a small bowl, whisk together mayonnaise, lime zest, lime juice, ground cumin, paprika, chili powder, Sriracha, salt, and black pepper until smooth and creamy.
  6. Assemble the Dish: Place the baked sweet potato halves flesh side up on plates. Lightly mash the insides with a fork to create a soft bed. Spoon the meat filling generously over each sweet potato. Drizzle with the lime-mayo sauce and finish with your desired toppings such as shredded cheese, diced tomatoes, or avocado.

  • Note 1: For homemade taco seasoning, mix 1 tablespoon chili powder, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon dried oregano, 1 teaspoon ground cumin, 1 teaspoon paprika, 1 teaspoon salt, and 1/4 teaspoon black pepper.
