- 1 pound spicy Italian chicken or turkey sausage, crumbled
- 1 large white onion, diced
- 4 garlic cloves, minced
- 8 cups chicken broth
- 8 cups peeled and diced sweet potato (about 2 pounds)
- 1 (28 oz.) can diced tomatoes
- 1 cup dried pasta (orecchiette used)
- 3 cups roughly-chopped kale
- Salt and freshly-cracked black pepper, to taste
- Freshly-grated Parmesan cheese, for garnish
Instructions
- Heat and Cook Sausage & Onions: Heat olive oil in a large stockpot over medium-high heat until shimmering. Add diced onion and crumbled sausage; cook for 5-7 minutes until the onion is translucent and sausage starts browning, stirring occasionally.
- Add Garlic and Simmer Broth: Stir in minced garlic and cook for 1-2 minutes until fragrant. Add chicken broth, diced sweet potatoes, and canned diced tomatoes. Stir well to combine, bring to a boil, then reduce heat to medium-low. Cover and simmer for 5 minutes.
- Cook Pasta and Add Kale: Add the dried pasta to the soup, stir to mix, and cook uncovered for 10-15 minutes until the pasta is al dente. Stir in roughly chopped kale and season with freshly ground black pepper and additional salt if needed.
