Ingredients
Scale
Dressing
- 1 bottle (16 ounces) creamy Poppy Seed dressing (Kraft brand recommended)
- 1/2 cup mayonnaise
- 1 tablespoon white vinegar
- 1/2 teaspoon salt
Salad
- 1 box (16 ounces) large elbow noodles
- 2 cups cooked, diced chicken (seasoned with salt and pepper)
- 3 cups red grapes, sliced in half (measured after slicing)
- 2/3 cup sliced almonds
- 2/3 cup sliced green onion
Instructions
- Prepare the dressing: In a large serving bowl, whisk together the creamy poppy seed dressing, mayonnaise, white vinegar, and salt until well combined. Cover the bowl and place it in the fridge to chill while you cook the pasta.
- Cook the noodles: Bring a large pot of salted water to a boil. Add the large elbow noodles and cook until al dente according to package directions. Once cooked, drain the noodles and rinse them under cold water to stop the cooking process and cool them down completely.
- Combine the salad: Add the cooled noodles, diced cooked chicken, halved grapes, sliced almonds, and sliced green onions to the bowl with the dressing. Gently fold all the ingredients together until evenly coated with the dressing.
- Chill and serve: Cover the salad with plastic wrap or a lid and chill in the refrigerator for at least 2 hours to allow flavors to meld. Serve cold and enjoy your delicious pasta salad!
Notes
- Make sure to season the chicken with salt and pepper before cooking for extra flavor.
- Use large elbow noodles for the best texture and to hold the dressing well.
- Chilling the salad for several hours improves the flavor and texture.
- You can substitute mayonnaise with Greek yogurt for a lighter version.
- Add additional veggies like celery or bell pepper for added crunch and color, if desired.
