Ingredients
Scale
Bread:
- 1 loaf of brioche or challah, cut into 1-inch cubes
Peaches:
- 4 ripe peaches, peeled and sliced
Egg Mixture:
- 6 large eggs
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
Topping:
- 1 cup brown sugar
- 1/2 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 1 teaspoon ground cinnamon
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure even baking temperature for the French toast bake.
- Prepare Egg Mixture: In a large bowl, whisk together the 6 eggs, 2 cups of whole milk, 1/2 cup granulated sugar, 1 teaspoon vanilla extract, and 1 teaspoon ground cinnamon until everything is well combined and smooth.
- Layer Bread and Peaches: Grease a 9×13-inch baking dish. Layer half of the cubed brioche or challah bread evenly on the bottom, then layer half of the peeled and sliced peaches over the bread.
- Add Egg Mixture: Pour half of the prepared egg mixture evenly over the bread and peaches layers to allow soaking.
- Repeat Layers: Repeat the process by layering the remaining bread cubes, then the remaining peach slices, and pour the remaining egg mixture over the top.
- Prepare Topping: In a separate bowl, mix together 1 cup brown sugar, 1/2 cup rolled oats, 1/2 cup all-purpose flour, 1/2 cup melted unsalted butter, and 1 teaspoon ground cinnamon until the mixture forms a crumbly topping.
- Add Topping and Bake: Sprinkle the topping evenly over the assembled bake. Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the topping is golden brown and the custard is set and firm to the touch.
- Cool and Serve: Remove from the oven and let the peach cobbler French toast bake cool for 10 minutes before serving to allow it to set and to enhance the flavors.
Notes
- Use ripe and juicy peaches for best flavor; substitute with frozen peaches if out of season but thaw and drain excess liquid.
- For a dairy-free version, swap whole milk with almond or oat milk and use a dairy-free butter alternative.
- Ensure bread cubes are sufficiently soaked in the egg mixture to yield a custardy texture.
- Letting the bake rest after baking helps it firm up and makes it easier to slice.
- Can be prepared the night before by assembling and refrigerating overnight, then baking in the morning (add extra baking time if baking from cold).
