Ingredients
Scale
Main Ingredients
- 1 cup unsweetened almond milk
- 1 scoop vanilla protein powder
- 1/2 ripe banana, mashed
- 1 tablespoon sugar-free vanilla pudding mix
- 1 tablespoon light cream cheese, softened
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/4 teaspoon vanilla extract
- pinch of salt
Optional
- 1 tablespoon chopped walnuts
Instructions
- Prepare the mixture: Add the almond milk, vanilla protein powder, mashed ripe banana, sugar-free vanilla pudding mix, softened light cream cheese, cinnamon, nutmeg, vanilla extract, and a pinch of salt to a blender. Blend all ingredients together until the mixture is completely smooth with no lumps.
- Freeze the mixture: Pour the blended mixture into a Ninja Creami pint container, making sure to keep the level below the maximum fill line. Secure the container lid tightly and place it on a flat surface in the freezer. Freeze the mixture for at least 12 hours until it is fully solidified.
- Process in Ninja Creami: Once frozen, remove the pint from the freezer and insert it into your Ninja Creami machine. Select the Lite Ice Cream or Protein Ice Cream setting to process the mixture into creamy ice cream.
- Adjust texture if needed: If after the first spin the ice cream texture is crumbly or not creamy enough, add 1 to 2 tablespoons of almond milk back into the pint. Reinsert the pint into the machine and run the spin cycle again until the desired creaminess is achieved.
- Add mix-ins: Make a small well in the center of the ice cream and add the chopped walnuts if using. Run the Mix-In cycle on the Ninja Creami to evenly incorporate the nuts into the ice cream.
- Serve: Once processed with mix-ins, serve the ice cream immediately for the best texture and flavor.
Notes
- Use a very ripe banana to enhance the authentic banana bread flavor.
- For a richer texture, consider adding an extra tablespoon of light cream cheese or a teaspoon of butter extract during blending.
- If you prefer your ice cream sweeter, you can add a low-calorie sweetener of your choice.
- Chopped walnuts add a nice crunch but can be omitted for a nut-free version.
