Ingredients
Scale
Main Ingredients
- 2 cups mashed potatoes (leftovers work well)
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup chopped green onions
- 1/4 cup sour cream (optional for added creaminess)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Breading and Frying
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Vegetable oil for frying
Instructions
- Combine Ingredients: In a large bowl, mix together the mashed potatoes, shredded cheddar cheese, cooked and crumbled bacon, chopped green onions, sour cream (if using), garlic powder, salt, and black pepper until well incorporated.
- Shape the Bites: Roll the potato mixture into 1-inch balls to form uniform bites.
- Prepare Breading Station: Set up three separate bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
- Bread the Bites: Coat each potato ball first in flour, then dip it into the beaten eggs, and finally roll it in the panko breadcrumbs until fully coated.
- Heat Oil: Heat vegetable oil in a skillet or fryer to 350°F (175°C), ensuring there is enough oil to submerge the bites.
- Fry the Bites: Fry the breaded potato bites in batches for 2-3 minutes or until they turn golden brown and crisp on all sides.
- Drain and Serve: Remove the fried bites with a slotted spoon and drain them on paper towels to remove excess oil. Serve warm with dipping sauces like ranch, sour cream, or ketchup.
Notes
- Using leftover mashed potatoes works best and helps with binding.
- Add sour cream for extra creaminess, but it is optional.
- Make sure oil is at the right temperature (350°F/175°C) to avoid greasy bites.
- Do not overcrowd the pan while frying to ensure even cooking.
- Serve immediately for the best crispy texture.
