Ingredients
Scale
Salad
- 4 cups Broccoli, chopped (Can substitute with cauliflower)
- 2 Honeycrisp Apples, diced (Any sweet apple like Fuji or Gala works well)
- 1 small Red Onion, finely chopped (Soak in cold water for milder flavor)
- 1/2 cup Sunflower Seeds (Can use chopped nuts like almonds or walnuts)
- 1/2 cup Dried Cranberries (Raisins or chopped dates can also work)
Dressing
- 1 cup Greek Yogurt or Mayonnaise (Choose Greek yogurt for a lighter option)
- 2 tablespoons Honey or Maple Syrup (Adjust based on sweetness preference)
- 2 tablespoons Apple Cider Vinegar (White wine vinegar or lemon juice can be used)
- Salt, to taste
- Pepper, to taste
Instructions
- Prepare the Produce: Chop the broccoli into bite-sized florets, dice the Honeycrisp apples, and finely chop the red onion. For a milder onion flavor, soak the red onion in cold water for 10 minutes and then drain.
- Combine Salad Ingredients: In a large bowl, toss together the broccoli, apples, soaked red onion, sunflower seeds, and dried cranberries until evenly mixed.
- Make the Dressing: In a separate bowl, whisk together the Greek yogurt (or mayonnaise), honey (or maple syrup), apple cider vinegar, salt, and pepper until the dressing is smooth and well combined.
- Dress the Salad: Pour the dressing over the salad mixture and gently toss to coat all ingredients without mashing the broccoli or apples.
- Chill and Serve: Refrigerate the salad for at least 30 minutes to allow the flavors to meld. Serve chilled for the best taste and texture.
Notes
- Soaking red onion in cold water mellows its sharpness and adds a milder taste to the salad.
- Substitute cauliflower for broccoli to create a different texture.
- Use Greek yogurt as a healthier, lighter alternative to mayonnaise.
- Adjust the sweetness and acidity of the dressing by varying honey and apple cider vinegar quantities to taste.
- For nut allergies, stick with sunflower seeds or other safe seeds instead of nuts.
- This salad is best eaten within 2 days of preparation to maintain freshness.
