Ingredients
Scale
Chicken and Glaze
- 2 skinless, boneless chicken breasts
- 1/4 cup BBQ sauce (store-bought or homemade)
- 2 tablespoons honey
- 1 tablespoon olive oil (for searing)
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
Roasted Potatoes
- 1 lb Yukon Gold or red potatoes, washed and cut into chunks
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- Fresh parsley, chopped
- Fresh thyme (or rosemary), chopped
- Toasted sesame seeds (optional)
Instructions
- Prepare Potatoes: Wash and cut potatoes into even-sized chunks for uniform cooking. Toss them with 2 tablespoons olive oil, garlic powder, smoked paprika, salt, and pepper. Spread out on a baking sheet in a single layer to ensure crispiness.
- Roast Potatoes: Roast potatoes in a preheated oven at 425°F (220°C) for 25-30 minutes, flipping halfway through to develop an even golden, crunchy crust.
- Season Chicken and Make Glaze: Pat chicken breasts dry and season lightly with salt, pepper, and smoked paprika. In a small bowl, mix honey and BBQ sauce together to create the glaze.
- Sear Chicken: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear chicken breasts 3-4 minutes per side until browned but not fully cooked through.
- Glaze and Cook Chicken: Brush the honey BBQ glaze generously over the chicken. Lower the heat, cover the pan, and cook for another 6-8 minutes until chicken is fully cooked, juicy, and has a sticky caramelized coating.
- Serve: Serve the honey BBQ chicken alongside roasted potatoes. Sprinkle fresh herbs such as parsley or thyme on top for color and freshness. Optionally, garnish with toasted sesame seeds.
Notes
- Ensure potatoes are spread in a single layer for best crispiness.
- Adjust honey amount in glaze according to desired sweetness.
- Use a meat thermometer to check chicken is cooked to an internal temperature of 165°F (74°C).
- For extra flavor, marinate the chicken in the glaze for 30 minutes before cooking.
- Fresh herbs like parsley and thyme add brightness and freshness to the dish.
