Description

This Hearty Sausage Spinach Mushroom Egg Bake is a delicious and protein-packed breakfast casserole that combines savory Italian sausage, fresh spinach, and earthy mushrooms with fluffy eggs and melted mozzarella cheese. Perfect for meal prep or feeding a crowd, this baked egg dish is packed with flavor and easy to make in just under an hour.

Ingredients

Scale

Egg Mixture

  • 10 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Sausage and Vegetables

  • 1 pound Italian sausage
  • 3 cups fresh spinach
  • 2 cups sliced mushrooms
  • 2 tablespoons olive oil (divided)

Cheese

  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 375°F and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook the sausage: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the Italian sausage and cook for 6–8 minutes, breaking it apart as it browns, until fully cooked. Transfer the cooked sausage to a plate and set aside.
  3. Sauté mushrooms and spinach: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and cook for about 5 minutes until browned. Then stir in the fresh spinach and sauté until wilted. Remove the skillet from heat.
  4. Mix egg base: In a large bowl, whisk together the 10 eggs, 1/2 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until the mixture is smooth and well combined.
  5. Combine all ingredients: Add the cooked sausage, sautéed mushrooms and spinach, and 1 cup shredded mozzarella cheese to the egg mixture. Stir thoroughly to evenly distribute all ingredients.
  6. Pour and smooth: Pour the combined mixture into the prepared greased baking dish. Smooth the top evenly with a spatula.
  7. Bake: Place the dish in the preheated oven and bake for 30–35 minutes, or until the center is just set and the edges turn golden brown.
  8. Cool and serve: Remove from the oven and allow to cool for 5 minutes before slicing into 12 squares. Serve warm and enjoy.

Notes

  • You can substitute Italian sausage with turkey sausage for a leaner option.
  • Fresh spinach can be replaced with frozen spinach (thawed and drained) if needed.
  • Feel free to add other vegetables such as bell peppers or onions for extra flavor.
  • This bake can be made ahead and refrigerated; reheat before serving.
  • Use lactose-free milk or vegan cheese to make it more suitable for lactose intolerance or vegan diets, but note this will alter the flavor.
