Hearty Irish Colcannon is a traditional creamy comfort food made with a mix of Russet and Yukon Gold potatoes mashed with butter and cream, combined with tender sautéed cabbage and onions, and topped with crispy bacon.   • 2 pounds Yukon Gold Potatoes

Instructions

  1. Cook the Potatoes: Place Russet and Yukon Gold potatoes in a large pot with salted water. Boil until the potatoes are fork-tender, about 15-20 minutes. Drain well.
  2. Mash the Potatoes: Return the drained potatoes to the pot, add 4 tablespoons of butter and 1 cup heavy cream or whole milk. Cover and mash the potatoes until smooth and creamy.
  3. Sauté Onion and Cabbage: In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook until it is tender. Stir in the chopped cabbage and continue cooking until the cabbage is tender and lightly browned, about 7-8 minutes.
  4. Combine Cabbage with Mashed Potatoes: Gently fold the cooked cabbage and onion mixture into the mashed potatoes along with half of the crispy bacon slices. Season with kosher salt and fresh ground black pepper to taste. Mix until well combined.
  5. Serve: Transfer the colcannon to a serving bowl. Top with the remaining crispy bacon slices and an additional pat of butter if desired. Serve warm for a comforting meal.
