  • 1 cup granulated sugar
  • 2 eggs, room temperature, beaten
  • 1 teaspoon pure vanilla extract


Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease well an 8-inch or 9-inch round cake pan and set it aside to prepare the batter.
  2. Toss Apples with Spices: In a large bowl, combine the diced apples with ground cinnamon, optional nutmeg, and lemon juice to coat. This adds flavor and helps keep the apple pieces from browning.
  3. Whisk Dry Ingredients: In a medium bowl, whisk together the gluten-free flour blend, xanthan gum (if using), baking powder, and kosher salt until evenly combined. Set aside.
  4. Cream Butter and Sugar: Using a hand mixer or stand mixer fitted with a paddle attachment, beat the room temperature unsalted butter and granulated sugar on medium-high speed until light and fluffy, about 4 minutes. The mixture should turn lighter in color and lose its grainy texture.

  12. Cool in Pan: Remove the cake from the oven and let it cool in the pan for 15 to 20 minutes. The cake will start to shrink slightly from the sides of the pan.
