- 1 1/2 pounds baby potatoes, halved
- 2 tablespoons olive oil

- 1 teaspoon Italian seasoning (included with chicken seasoning)
- 2 cloves garlic, minced (half of the 4 cloves)
Instructions
- Preheat and Prepare Potatoes: Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan. In a large bowl, toss the halved baby potatoes with 2 tablespoons olive oil, half of the minced garlic, salt, black pepper, paprika, and Italian seasoning until evenly coated. Spread the potatoes evenly on one side of the prepared pan.
- Roast Potatoes: Place the pan with potatoes in the oven and roast for 20 minutes until they start to become tender and golden.
- Season Chicken: While the potatoes roast, season the chicken breasts with the remaining olive oil, minced garlic, salt, and pepper, making sure each piece is well coated.
- Add Chicken and Cheese: Remove the pan from the oven. Push the partially roasted potatoes to one side of the pan and place the seasoned chicken breasts on the other side. Sprinkle the grated Parmesan cheese evenly over both the chicken and potatoes. Drizzle the melted butter over everything.
