Description

These Funnel Cake Bites are a delightful, bite-sized twist on the classic fair treat. Crispy on the outside with a tender, fluffy interior, they’re perfectly dusted with powdered sugar and quick to make. Ideal for a fun snack or party appetizer, these bites combine warm spices like cinnamon and nutmeg with the familiar comfort of funnel cake in a convenient finger food form.

Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup granulated sugar

Wet Ingredients

  • 1½ cups milk
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

For Frying & Serving

  • Vegetable oil for frying (about ¾ inch in pot)
  • Powdered sugar for dusting

Instructions

  1. Prepare the batter: Beat the eggs in a bowl until light and foamy to incorporate air, then stir in the milk and pure vanilla extract to combine the wet ingredients.
  2. Mix dry ingredients: In a separate large bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, salt, and granulated sugar until evenly blended.
  3. Combine wet and dry: Gradually pour the wet ingredients into the dry mixture while stirring gently to form a smooth batter free of lumps but not overmixed.
  4. Heat the oil: Pour vegetable oil into a deep skillet or pot, heating about ¾ inch deep to 375°F (190°C) using a thermometer for accuracy to ensure proper frying temperature.
  5. Fry the bites: Using a spoon, drop small spoonfuls of batter carefully into the hot oil, frying each batch for about 1 to 2 minutes on each side or until the bites turn golden brown and crisp. Use a slotted spoon to remove them and drain on paper towels to remove excess oil.
  6. Finish & serve: Once all funnel cake bites are cooked and drained, dust them generously with powdered sugar while still warm for that classic sweet finish. Serve immediately for best texture and taste.

Notes

  • Use a candy or deep-fry thermometer to maintain accurate oil temperature for crispy, evenly cooked bites.
  • Do not overcrowd the pan to avoid large temperature drops in the oil which can make the bites greasy.
  • Serve fresh as they tend to lose their crispness over time.
  • For a fun variation, drizzle with chocolate or caramel sauce instead of powdered sugar.
  • You can prepare the batter ahead but fry the bites just before serving.
