Description

This Fresh Strawberry Pie is a delightful no-bake dessert featuring a sweet and tangy strawberry gelatin filling combined with fresh strawberries, set in a crisp pie crust. Perfectly chilled and topped with whipped cream, it’s a refreshing and easy-to-make treat ideal for warm weather or any occasion.

Ingredients

Scale

Filling

  • 1 (12-ounce) can lemon-lime soda
  • 2 teaspoons cornstarch
  • 1 (3-ounce) package strawberry gelatin (jello)
  • 1 (16-ounce) container fresh strawberries

Crust

  • 1 (9-inch) prepared pie crust (regular or graham cracker, baked according to package instructions)

Topping (optional)

  • Fresh whipped cream or whipped topping, for serving

Instructions

  1. Cook the gelatin base: In a medium saucepan, combine the lemon-lime soda and cornstarch. Bring the mixture to a boil over medium heat, stirring constantly. Continue boiling for about 3 minutes until the liquid becomes nearly clear. Remove the saucepan from heat and whisk in the strawberry gelatin powder until fully dissolved.
  2. Prepare the strawberries: While the gelatin mixture cools, wash the fresh strawberries thoroughly, hull them to remove the green tops, and slice them in half.
  3. Combine and fill the pie: Once the gelatin mixture has cooled to room temperature but not yet set, gently fold in the prepared strawberries. Pour the combined mixture into the baked and cooled pie crust, spreading evenly.
  4. Chill to set: Place the pie in the refrigerator and chill for several hours or until the gelatin has fully set and the pie is firm.
  5. Serve: Slice the pie and serve chilled, optionally topped with a dollop of fresh whipped cream or whipped topping for added richness.

Notes

  • Be sure to let the gelatin mixture cool before adding the strawberries to prevent them from cooking or becoming mushy.
  • A graham cracker crust adds a nice complementary flavor, but a traditional baked pie crust works well too.
  • For an extra touch, garnish with fresh mint leaves or additional sliced strawberries on top.
  • This pie is best served the same day or within two days to maintain freshness of the strawberries.
