Description

This Easy Crockpot Creamy Chicken Pasta is a comforting and flavorful one-pot meal perfect for busy weeknights. Tender chicken breasts slow-cooked with a blend of garlic, onion, and Italian seasonings create a savory base, then combined with cream cheese, heavy cream, and Parmesan for a luscious sauce. Tossed with perfectly cooked pasta and fresh spinach, this dish is creamy, hearty, and packed with protein.

Ingredients

Scale

Chicken and Seasonings

  • 1 1/2 pounds boneless skinless chicken breasts
  • 3 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Sauce Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese

Pasta and Vegetables

  • 12 ounces penne or rotini pasta
  • 1 cup baby spinach, chopped
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the chicken: Place the chicken breasts in the bottom of the crockpot. Pour in the chicken broth and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and black pepper. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until the chicken is tender and fully cooked.
  2. Shred the chicken: Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
  3. Make the creamy sauce: Add the softened cream cheese, heavy cream, and grated Parmesan cheese to the crockpot. Stir well until the cheeses melt and combine with the broth to form a creamy sauce.
  4. Cook the pasta: Meanwhile, cook the pasta according to package instructions until al dente. Drain well.
  5. Combine pasta and spinach: Add the cooked pasta and chopped spinach to the crockpot. Stir everything together until evenly coated in the sauce.
  6. Final simmer: Cover and cook for another 10 to 15 minutes on low until the spinach wilts and the pasta is heated through.
  7. Serve: Sprinkle with fresh parsley before serving for a fresh, herbal finish.

Notes

  • Rotini, penne, or bow tie pasta work well because they hold the creamy sauce nicely.
  • You can add mushrooms or sun-dried tomatoes for additional flavor.
  • If the sauce becomes too thick, add a splash of chicken broth or milk to loosen it before serving.
