Description

A refreshing and vibrant Cucumber, Tomato & Avocado Salad that’s quick to prepare, combining crisp cucumber, juicy tomatoes, creamy avocado, and tangy feta with a light olive oil and red wine vinegar dressing. Perfect as a light lunch or side dish.

Ingredients

Scale

Salad Ingredients

  • 1 cucumber, peeled, seeded, and diced
  • 1 1/2 cups cherry tomatoes, halved (or diced regular tomatoes)
  • 1 ripe avocado, diced
  • 4 oz feta cheese, cubed
  • 2 tablespoons red onion, minced
  • 1 handful fresh parsley, minced

Dressing Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar (or lemon juice)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Combine vegetables: In a large bowl, combine diced cucumber, cherry tomatoes, and diced avocado carefully to keep avocado intact.
  2. Add cheese and herbs: Add feta cheese cubes, minced red onion, and minced fresh parsley to the bowl with the vegetables.
  3. Prepare dressing: In a small bowl, whisk together extra-virgin olive oil, red wine vinegar (or lemon juice), salt, and freshly ground black pepper until well combined.
  4. Toss salad: Drizzle the dressing over the salad and gently toss to combine, taking care not to mash the avocado or feta cheese.
  5. Serve: Serve immediately to enjoy the freshest flavors and best texture.

Notes

  • For best texture, serve the salad immediately after tossing.
  • You can substitute lemon juice in place of red wine vinegar for a slightly different tang.
  • Use ripe but firm avocado to avoid mushiness in the salad.
  • Add toasted nuts like almonds or walnuts for extra crunch, if desired.
  • This salad is naturally gluten-free and vegetarian.
