Instructions
- Prep Mangos: Peel, pit, and dice the ripe mangoes. Blend the diced mangoes until smooth to create a fresh mango puree.
- Bloom Gelatin: Sprinkle the gelatin evenly over cold water and let it sit for 30-45 seconds until it softens and blooms.
- Combine Mix: In a mixing bowl, whisk together the bloomed gelatin, granulated sugar, coconut milk, and mango puree until the mixture is smooth and homogeneous.
- Heat Mixture: Pour the combined mixture into a saucepan and heat over medium-low heat. Stir continuously until small bubbles appear around the edges and the gelatin fully dissolves, about 4-5 minutes. Do not boil.
- Pour & Chill: Transfer the heated mixture into serving bowls or molds. Refrigerate for at least 6 hours or until the pudding is fully set and firm.
