Cheesecake Layer

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract


Instructions

  1. Prepare Cookie Dough: In a large bowl, using an electric hand mixer, beat together the softened butter, vegetable shortening, light brown sugar, granulated sugar, vanilla extract, salt, and cider vinegar until creamy and fully combined.
  2. Add Egg, Baking Soda, and Flour: Beat in the egg and baking soda, then gradually mix in the all-purpose flour until just combined. Stir in the semi-sweet chocolate chips evenly throughout the dough. Divide this dough into two equal portions and set aside.
  3. Make Cheesecake Filling: In a medium bowl, beat the softened cream cheese and granulated sugar with an electric mixer until creamy and smooth. Then beat in the egg and vanilla extract until fully incorporated.
  4. Assemble Bars: Press half of the chocolate chip cookie dough evenly into the bottom of a 9×13-inch glass baking pan. Spread the cream cheese filling evenly over the cookie dough in the pan. With the remaining cookie dough, flatten small portions into disks and arrange them evenly spaced on top of the cream cheese layer.
