Instructions
- Preparation: Preheat your oven to 375°F (190°C) to get ready for baking the ingredients.
- Cook Chicken and Jalapenos: Arrange the chicken breasts and halved, seeded jalapenos on one baking sheet. Drizzle with olive oil and sprinkle with salt. Place the bacon strips on a separate baking sheet. Bake both sheets in the oven for 20-25 minutes until the chicken is cooked through and the bacon is crispy.
- Prep Cheese Mixture: In a large mixing bowl, combine ¾ cup of the cheddar cheese, the cream cheese, light sour cream, low-fat milk, and cayenne pepper. Mix well until smooth and creamy.
- Assemble Ingredients: Once cooked, crumble the bacon, shred the chicken, and dice most of the cooked jalapenos (reserve a small amount for topping). Add ¾ of the diced jalapenos, shredded chicken, and ¾ of the bacon to the cream cheese mixture. Stir to combine thoroughly.
- Layer the Casserole: In a 9 x 12 inch baking dish, spread the fresh cauliflower florets evenly on the bottom. Pour the cream cheese, chicken, and bacon mixture over the cauliflower and spread out evenly.
- Top and Bake: Sprinkle the remaining ½ cup cheddar cheese on top of the casserole. Then evenly distribute the reserved jalapenos and bacon. Bake in the oven at 375°F for 20 minutes or until the casserole is bubbly and the top is golden brown.
