Description

Buffalo Chicken Roll-Ups are a spicy and creamy appetizer featuring shredded rotisserie chicken mixed with cream cheese, mozzarella, cheddar, and buffalo sauce, all wrapped in flaky puff pastry and baked to a golden perfection. Perfect for game days or casual gatherings, these roll-ups offer a flavorful kick with a creamy texture and crispy exterior.

Ingredients

Scale

Buffalo Chicken Filling

  • 1 package (8 ounces) cream cheese, room temperature
  • 2 cups (280g) rotisserie chicken, shredded and chopped
  • 1 cup (113g) mozzarella cheese, shredded
  • 1 cup (113g) sharp cheddar cheese, shredded
  • 1/3 cup (84g) buffalo sauce

Puff Pastry and Toppings

  • 1 sheet puff pastry, thawed
  • 1 large egg, beaten (for egg wash)
  • Ranch dressing, for drizzling
  • Extra buffalo sauce, for drizzling
  • Parsley, for garnish

Instructions

  1. Preheat the Oven and Prepare the Baking Sheet: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prevent sticking and allow even baking.
  2. Make the Buffalo Chicken Filling: In a medium bowl, combine the cream cheese, shredded rotisserie chicken, mozzarella cheese, sharp cheddar cheese, and buffalo sauce. Mix thoroughly until all ingredients are evenly incorporated. Set aside.
  3. Prepare the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry into a rectangular shape approximately 9×12 inches to create a base for the filling.
  4. Fill and Roll the Pastry: Spread the buffalo chicken mixture evenly over the puff pastry, leaving a small border around the edges to allow sealing. Carefully roll the pastry tightly into a log, ensuring the edges are sealed to prevent filling leakage. Slice the log into 1-inch thick pieces.
  5. Bake the Roll-Ups: Arrange the roll-up slices onto the prepared baking sheet. Brush the tops with beaten egg to promote a golden, glossy finish. Bake for 15 to 18 minutes or until golden brown. For an extra warm and melty topping, spoon additional buffalo chicken mixture on top of each roll-up and bake for an additional 6 to 8 minutes.
  6. Serve and Enjoy: Remove the roll-ups from the oven, drizzle with extra buffalo sauce and ranch dressing, and garnish with fresh parsley. Serve immediately while warm for the best flavor and texture.

Notes

  • Make sure the cream cheese is softened to room temperature for easier mixing.
  • You can substitute the rotisserie chicken with cooked shredded chicken breast if preferred.
  • If puff pastry sheets are frozen, allow sufficient time to thaw in the refrigerator before rolling.
  • The egg wash is essential for a shiny golden crust but can be omitted for a dairy-free version.
  • Adjust the amount of buffalo sauce to suit your preferred spice level.
