Description

Delicious BBQ Chicken Nachos featuring crispy white corn tortilla chips topped with tender shredded chicken coated in tangy barbecue sauce, melted mozzarella and cheddar cheese, and fresh toppings like red onion, cilantro, and jalapeños. Perfect for a quick and satisfying appetizer or game day snack.

Ingredients

Scale

Chips

  • 1 large bag (18 ounces) white corn tortilla chips

BBQ Chicken

  • 1-pound cooked, shredded chicken
  • 1 bottle (18 ounces) barbecue sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste

Cheese

  • 2 cups shredded Mozzarella cheese
  • 2 cups shredded mild cheddar cheese

Toppings (Optional)

  • ¼ cup finely diced red onion
  • 2 tablespoons chopped cilantro
  • 1 Roma tomato, chopped
  • Pickled jalapeno slices
  • Ranch dressing or sour cream

Instructions

  1. Preheat Oven and Prepare Chips: Preheat your oven to 375°F (190°C). Arrange the tortilla chips evenly on a large baking sheet lined with parchment paper to prevent sticking.
  2. Prepare BBQ Chicken Mixture: In a large bowl, combine the cooked shredded chicken with garlic powder, onion powder, salt, and pepper. Pour in your desired amount of barbecue sauce and mix thoroughly until the chicken is well coated.
  3. Assemble Nachos: Evenly spread the barbecue chicken mixture over the tortilla chips. Then sprinkle both the shredded mozzarella and cheddar cheeses evenly on top. Add the finely diced red onion over the cheese layer for added flavor and texture.
  4. Bake the Nachos: Place the assembled nachos in the preheated oven and bake for about 12 minutes, or until the cheese is completely melted and bubbly.
  5. Add Fresh Toppings and Serve: Carefully remove the nachos from the oven. Garnish with chopped cilantro, diced Roma tomato, pickled jalapeno slices, and drizzle with ranch dressing or sour cream as desired. Serve warm and enjoy!

Notes

  • Feel free to customize toppings based on your preference, such as adding avocado, black olives, or jalapeno peppers.
  • Use leftover rotisserie chicken or grilled chicken breasts for quick preparation.
  • For a spicier version, increase the amount of jalapeno slices or add a dash of hot sauce to the BBQ chicken mixture.
  • If you prefer a crispier chip base, bake the tortilla chips for 5 minutes before adding toppings.
