Ingredients
Scale
Croissant Sandwich
- 8 croissants, sliced in half
- 8 slices sharp cheddar cheese
- 8 slices deli ham
Scrambled Eggs
- 6 large eggs
- â…“ cup whole milk
- Salt and pepper, to taste
- ½ cup shredded mozzarella cheese
Instructions
- Prepare the croissants: Preheat your oven to 350°F (175°C). Arrange the bottom halves of the croissants in a single layer on a large rimmed baking sheet. Place one slice of ham and one slice of sharp cheddar cheese on each croissant bottom.
- Cook the scrambled eggs: In a medium bowl, whisk together the eggs, whole milk, salt, and pepper. Pour the mixture into a greased pan or skillet over medium-high heat. Cook the eggs for 2-3 minutes, stirring gently with a wooden spoon or rubber spatula, making sure to scrape the bottom of the pan so they cook evenly.
- Add mozzarella cheese to eggs: When the eggs look mostly set but still slightly soft, stir in the shredded mozzarella cheese until it melts and combines with the eggs. Continue cooking until the eggs reach your preferred consistency. Remove from heat.
- Assemble and bake sandwiches: Spoon a generous amount of the cheesy scrambled eggs onto the ham and cheese layered croissant bottoms. Top each with the other half of the croissant. Bake in the preheated oven for 10 minutes or until the cheddar cheese is melted and the croissants are nicely toasted.
- Serve or store: Serve the sandwiches immediately while warm, or allow them to cool completely before wrapping individually in plastic wrap and freezing. To reheat, unwrap, place on a paper towel, and microwave for 1 minute or until heated through.
Notes
- You can substitute ham with bacon or sausage if preferred.
- For extra flavor, add herbs like chives or parsley to scrambled eggs.
- Freezing the sandwiches makes them a convenient grab-and-go breakfast option.
- Ensure croissants are completely cooled before freezing to maintain texture.
- Use full-fat cheese for the best melting and flavor.
